All I know is that some of that wood flavors up my pork butts, brisket, ribs, fish, chicken, hamburgers, hot dogs, sausage, pork chops and steaks really well when I slow cook, smoke or grill them. I hate to admit this but that wood gives the vegetables I cook on the grill a real good flavor too. Asparagus, different squashes, mushrooms, corn on the cob, potatoes, onions, cherry tomatoes and bell peppers all work well.
I use hickory, mesquite, pecan, apple or cherry wood depending on what I'm cooking. I sure hope I never have a reason to use my HDY stock certificates for that.
